3 Tbsp red wine vinegar
2 tsp olive oil
½ tsp salt
¼ tsp pepper
2 garlic cloves, minced
4 cups coarsely chopped tomato
½ cup vertically sliced red onion
¼ cup chopped fresh basil leaves
6 bacon slices, crumbled
1 loaf day-old Ciabatta or other crusty bread, cut into 1-inch cubes
1-2 Tbsp olive oil
2 cups mixed greens

Make the tomato mixture a day ahead; toss with bread and greens just before serving.

Preparation Serves 6
Preheat oven to 350°F.
Combine first 5 ingredients (through garlic) in a bowl; stir with a whisk. Add tomato, onion, basil and bacon; toss well. Set aside. In a large bowl, lightly toss
bread cubes with olive oil to coat. Arrange bread cubes in a single layer on a baking sheet. Bake for 15 minutes or until toasted; cool.
Add bread and greens to tomato mixture; toss gently to combine. Serve immediately.
