Pizza Meatloaf Recipe

This decadent dinner combines two favorite hearty favorites into one delicious meal! Here, Pizza Expert and Chef Shealyn Brand (@shealynsharleen) shows us how to please everyone with this keto-friendly mashup that’s topped with fresh basil, direct from her indoor herb garden.  


1 lb Ground Beef
1 cup Pizza Sauce, divided
1/2 cup Italian Breadcrumbs
1 Egg
1 Green Bell Pepper, roughly chopped, divided
1/2 Yellow Onion, finely chopped
3 cloves Garlic cloves, minced
Fresh Oregano, chopped
Kosher Salt
Freshly ground Black Pepper
2 cups shredded Mozzarella Cheese
Handful Pepperoni Slices
Handful sliced Black Olives
Freshly grated Parmesan Cheese
Handful fresh Basil, julienned 


Preheat oven to 375°

In a large bowl: combine the beef, 1/4 cup pizza sauce, bread crumbs, egg, 1/2 of the bell pepper, onion, garlic, and oregano. Optional: Season with salt & pepper to taste.

Press the meat mixture into an 8” round pan. Brush the remaining pizza sauce over the top of the meat mixture. Bake for 20 minutes.

Remove from the oven and top with mozzarella, remaining bell peppers, pepperoni, and olives. Bake for an additional 25 minutes, or until the cheese is melted and the beef is cooked throughout.

Sprinkle with parmesan and a kiss of fresh basil. Enjoy!
