Pesto Chickpea Salad Sandwich Recipe

Turn those fresh AeroGarden herbs into a pesto that brings serious flavor to chickpeas! This simple sandwich from Chef Jason Goldstein (@chophappy) packs in healthy proteins and fats and makes for a perfect energizing lunch. 

Pesto ingredients

1 handful Almonds
2 cloves Garlic
1 handful Parsley
1 handful Basil
1 teaspoon Salt
1 teaspoon Pepper
1 tablespoon Red Wine Vinegar
1⁄2 cup Olive Oil

Chickpea Salad ingredients

2 cans Chickpeas
1 teaspoons Salt
1 teaspoon Pepper
1⁄2 Red Onion chopped
2 tablespoons Mayo, plus 1 tablespoon for bread
2 slices Bread
4 slices Tomato
8 leaves Basil


Place the almonds and garlic in the food processor and pulse for 30 seconds. Next, add the parsley, basil, salt, pepper, and red wine vinegar and process on low while drizzling in olive oil. Set aside. 

In a medium bowl, combine the chickpeas, salt, and pepper. Smash the chickpeas with a potato masher. Add mayo, pesto, and onions and combine. 

Smear bread slices with mayo, and top with tomato slices, basil leaves, and chickpea mixture. Repeat for a second sandwich and enjoy! Serves 2.
