Mango and Cilantro Salsa

YIELD: Makes about 1 3/4 cups 

Ingredients

  • 2 small mangoes, peeled, pitted, diced
  • 3/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 teaspoon minced peeled fresh ginger
  • 1/2 teaspoon grated lime peel
  • 1/8 teaspoon cayenne pepper

Preparation

Combine all ingredients in medium bowl; toss to blend. Season with salt and pepper. Let stand 20 minutes. (Can be prepared 3 hours ahead. Cover and refrigerate.)
