½ tsp lemon zest

1½ cups lemon juice

¼ cup chopped fresh thyme leaves

1 Tbsp olive oil

2½ Tbsp honey

4 boneless, skinless chicken breasts

½ tsp salt

¼ tsp pepper

Preparation:  Serves 4

Combine first 5 ingredients (through honey) in a large zip-top plastic bag. Add chicken; seal bag. Chill 2 hours, turning occasionally.

Prepare grill or broiler.

Remove chicken from bag; discard marinade. Sprinkle chicken with salt and pepper. Place chicken on grill rack or broiler pan coated with cooking spray; cook 6 minutes on each side or until chicken is done.
