4 cups cooked white or brown rice2 Tbsp chopped fresh basil leaves1 Tbsp toasted pine nuts1 tsp lemon zest2 tsp lemon juice 2 tsp olive oil
Preparation: Serves 4Cook rice according to package directions; transfer into a serving bowl. Stir in basil, pine nuts, lemon zest and juice, and olive oil; serve immediately.
