Green Papaya Spring Roll with Coconut Peanut Sauce Recipe
Spring calls for a tasty way to use fresh spring veggies and herbs! We love this healthy snack from Nicole Scharer (@nicole_scharer) that incorporates fresh herbs from your AeroGarden–perfect for afternoon parties or as a side dish!
Edible Flowers, optional
3 leaves Butter Lettuce, torn into small pieces
1 Green Papaya, peeled and shredded
1 large Carrot, peeled and shredded
Handful of Mint and Basil, julienned
Rice Paper Wrappers
Grilled shrimp or chicken, optional
Moisten rice paper wrapper in a large bowl of lukewarm water. Sprinkle on edible flowers, top with lettuce, then papaya, carrot and fresh herbs (and shrimp or chicken, if using). Let sit for about 1 minute so wrapper is flexible. Start at bottom end and fold up, then fold in sides and complete the roll. Serve with Coconut Peanut Sauce.
Coconut Peanut Sauce
1/2 cup smooth Peanut Butter
1/2 cup Sweet Thai Chili Sauce
1/2 cup Coconut Milk
In a food processor, combine all ingredients and blend until smooth. Add more sweet chili for a spicier sauce, or more coconut milk for a milder preparation.
Makes about six spring rolls.
