Greek Lamb Burgers


¾ cup cucumber, peeled, seeded and grated
½ cup plain yogurt
2 tsp lemon juice
2 tsp chopped fresh mint leaves
1 garlic clove, minced
Salt and pepper

Lamb Burgers
1½ lb ground lamb
½ small onion, minced
¼ cup chopped fresh parsley
2 tsp chopped fresh oregano leaves
Salt and pepper
4 pita breads
2 tomatoes, sliced
Mixed greens

Preparation:  Serves 4
Heat grill to high.  

For the Tzatziki:  
In a medium bowl, combine the cucumber, yogurt, lemon juice, mint and garlic; season with salt and pepper. Cover, and refrigerate until ready to use. Will keep in the refrigerator for up to 3 days.

For the Lamb Burgers:  
In a large bowl, gently combine the lamb, onion, parsley and oregano; season with salt and pepper. Gently form the mixture into 4 large patties, about 1½ inches thick. Grill until medium rare, 4 to 6 minutes per side.

To serve, warm the pitas on the grill; halve and fill with the burgers, Tzatziki, tomatoes and mixed greens.
