3 oz crumbled feta cheese
¼ cup buttermilk
3 Tbsp fresh lemon juice
1 shallot
1 Tbsp minced fresh oregano leaves
¼ tsp pepper
2 Tbsp olive oil
¼ small red bell pepper, seeded and roughly chopped
2 Tbsp kalamata olives, pitted

Preparation:  Makes about 1 cup

Process first 6 ingredients (through pepper) in a food processor until smooth. Gradually add oil in a steady stream, processing until smooth. Add bell pepper and olives and pulse 3 seconds.
